  • 2 cooked chicken breasts, shredded (rotisserie chicken works)
  • œ onion, sliced
  • 1 garlic clove, minced
  • 1 chipotle chili in adobo sauce (or mild chili flakes)
  • œ can diced tomatoes
  • Salt & pepper
  • Small corn tortillas
  • Toppings: avocado, coriander, lime wedges, sour cream

Method:

  1. Sauté onion & garlic until soft.
  2. Add tomatoes & chipotle, simmer 5 min. Blend if smoother sauce is preferred.
  3. Stir in chicken, simmer another 5 min.
  4. Serve with tortillas & toppings.

Vegetarian option: Swap chicken for black beans or mushrooms.
